A recipe to brighten up your aperitifs!

Pita

Ingredients

60 g coconut flour (or another flour if you don't have any, preferring a wholegrain flour, though the result will be less soft)
30 g psyllium (available in health food shops)
40 g olive oil (or sunflower, avocado, or coconut oil)
250 g boiling water
5 g bicarbonate of soda
A pinch of salt

Recipe 


Mix the dry ingredients together thoroughly (coconut flour, psyllium, salt, and bicarbonate of soda).
Then add the olive oil and rub the mixture to a breadcrumb consistency.
Then add the boiling water and mix with a spatula until a firm dough forms (the psyllium will absorb the boiling water and the dough will swell).
Divide the dough into 6 portions, flatten by hand or with a rolling pin, and brown on both sides in a frying pan.

Chickpea hummus

Ingredients

400g cooked chickpeas 
1 crushed garlic clove 
2 tablespoons of tahini (sesame paste)
Juice of one lemon
1 teaspoon of salt Olive oil

Recipe


In a food processor, blend the chickpeas, crushed garlic clove and tahini, then add the lemon juice and salt and blend again until you obtain a smooth cream. Serve chilled with a drizzle of olive oil.


If you don't have tahini, you can make it yourself! Toast some sesame seeds in a dry frying pan for a few minutes and blend them for a few minutes. You can optionally add a drizzle of olive oil to improve the texture.
