Serves 6:

– 700 g butternut squash

– 1 potato

– 1 onion

– 200 ml coconut milk

– 1 tablespoon olive oil

– 400 ml water

– 1 teaspoon curry powder

– 1 pinch of salt

– 1 pinch of pepper

Recipe

Step 1: Wash and dice the vegetables. Finely chop the onion.

Step 2: In a saucepan, heat the olive oil and fry the onion for a few minutes, then add the squash and potato pieces, followed by the water.

Step 3: Leave covered over a medium heat for around 30 minutes for optimal cooking, then add the coconut milk and blend.

Step 4: Add salt, pepper, and curry, then mix your dish. You can also add a little ginger, nutmeg, or cinnamon if you like. 

The benefits of butternut squash soup

Butternut squash is a nutritious energy source containing essential vitamins, minerals and antioxidants. It adds flavour to meals while being low in calories and high in fibre. It is particularly rich in vitamin C and contains magnesium, making it ideal for boosting energy levels and supporting immunity. It also contains antioxidants, compounds that are essential for combating inflammation.

It is also rich in carotenoids, particularly beta-carotene, which give butternut squash its vibrant colour. These compounds are converted by the body into vitamin A. Vitamin A is essential for regulating cell growth, eye health, bone health and immune function.

It lends itself to many recipes. It has a sweet, nutty flavour that works well in soups, as well as in purées, velvety soups, gratins, or simply pan-fried in chunks. Its flavour pairs beautifully with potato, red kuri squash, sweet potato, and carrot. For an indulgent touch, you can stir in some crème fraîche and even a little grated cheese.
