Ingredients

1 shallot Fresh spinach or radish tops 

4-5 potatoes 

2 courgettes (or any seasonal vegetable) 

1 tablespoon of olive oil 

30g of salted granola with cashew nuts and herbes de Provence Tomato Croq

Recipe

  1. Sauté the vegetables in olive oil, then add an organic vegetable stock.
  2. Cover with boiling water to the level of the ingredients.
  3. Leave to simmer on a low heat for around twenty minutes.
  4. Blend everything together.
  5. Place everything in a bowl and sprinkle with granola!
