Ingredients

300 g sweet potato
60 g rice flour
65 g potato starch
1 teaspoon of salt
1 pinch of pepper
Spices: cumin, turmeric, curry…
Olive oil

Recipe

Peel the sweet potatoes and cook them in water.
Mash them and add the spices and oil.
Add the cornflour and flour and mix well until a dough forms.
Shape into rolls of 2 cm in diameter, then cut them into pieces of approximately 1.5 cm in length.
Roll the gnocchi using a fork.
Then cook the gnocchi in salted boiling water for 3 minutes.

You can sprinkle the gnocchi with salted cashew and herbes de Provence granola, for extra crunch and indulgence.
