4 oranges or blood oranges
1 kale
1 small shallot, very finely chopped
olive oil
sea salt
optional: pumpkin and sunflower seeds

Recipes

Remove the thick stems from the kale thoroughly.
Wash the kale and tear it into pieces by hand (or slice finely with a knife).
Slice the oranges into rounds.
Mix the kale with olive oil, salt and the remaining citrus juice (you can also add an extra orange for more juice).
Mix well so the kale is thoroughly coated.
Add the shallot and oranges, and the seeds if you'd like an extra boost.
Serve immediately and enjoy your kale salad!

Once ready, you can top with salted granola with cashew nuts and herbes de Provence, Tomato croq, for an extra crunch.
