A vegetable crumble recipe, to be composed according to whatever seasonal vegetables are available!

Ingredients

Vegetables according to what is in season, for example:
2 peppers
1 courgette
1 aubergine
1 tomato

Crumble topping:

50 g of rice flour
50 g of gluten-free oats
20 g of breadcrumbs
3 tablespoons of olive oil
2 tablespoons of almond butter
Pepper
Herbes de Provence

Sauté the vegetables in a frying pan with a little olive oil.
Place them in an ovenproof dish.
Pour the crumble mixture on top, after mixing all the ingredients together.
In the oven at 180° for 45 minutes.

Once ready, you can add some salted cashew and herbes de Provence granola, Tomato croq, on top for extra crunch.
