A summer idea for a light and indulgent dinner!

Ingredients

2 aubergines moyennes (bien fermes)
une petite échalote, finement ciselée
1 gousse d’ail, bien écrasée
tomate concentrée bio ou sauce tomate (2 cuillères)
le jus d’une demi citron
2 cuillères à soupe de tahini
2 verres de quinoa cuit (ou tout autre graines que vous aimez)
une bonne poignée d’herbes de votre choix (persil, basilic, ciboulette….)
une poignée de notre granola salé aux noix de cajou et herbes de Provence Tomato croq pour le topping
huile d’olive
sel et poivre du moulin

Pour la sauce :
 

1 demi verre de graines de tournesol grillés
2 poivrons rouges cuits bio (vapeur ou en bocal)
1 gousse d’ail
1 cuillère de paprika
1 cuillère de vinaigre de cidre (optionnel)
1 peu de persil
1 cuillère de concentrée de tomate bio

Recipe

Blend all the sauce ingredients in a blender. Set aside.

Cut the aubergines in half lengthways and hollow them out. Keep the flesh you have removed for later

Place them on a baking tray, hollow side up, and brush them with oil

Bake for 20 minutes in a moderate oven until lightly golden

Finely chop the aubergine flesh. Sauté the shallots and garlic in olive oil in a frying pan. Add the aubergine and cook until the flesh has reduced in volume (5 minutes)

Mix with the chopped herbs and quinoa, then fill the aubergines. You can put everything back in the oven for 5 minutes.
