A banana bread recipe that is dairy-free, gluten-free and vegan, incredibly moist, and healthy! Perfect to make with the kids — guaranteed to be a hit! Great for the soul too!

 

Note that you can choose to leave out the sugar entirely (or reduce it significantly), as banana is naturally sweet and can be enough to sweeten the cake along with the dark chocolate.

Banana on top of the cake: banana gives bakes a uniquely moist texture!

Ingredients

3 small mashed bananas (215g of flesh) or 4 small bananas if you are not adding any sweetener at all
100ml of milk (plant-based if you prefer)
2 eggs (you can replace them with 100g of apple sauce or 2 tablespoons of starch mixed with 4 tablespoons of water)
65g of coconut oil, melted (you can replace it with almond butter)
50g of maple or agave syrup (maple syrup has the advantage of also containing some minerals and being lower in fructose)
150g of rice flour (or maize flour)
70g of hazelnut or almond powder
100g of dark chocolate chunks
1 teaspoon of bicarbonate of soda
Salt (1 pinch)
1 tablespoon of liquid vanilla extract
Pecan nuts (optional)

Recipe

Preheat the oven to 200°C.

Mix the melted coconut oil and agave syrup. Add the eggs, stir, then add the bananas and milk. Mix well.

Then add the remaining ingredients. You can also mix using a food processor. The batter should be smooth and well combined.

Add the crushed chocolate and stir, then pour the batter into the tin lined with baking paper or greased with olive oil.

Sprinkle with roughly broken pecan nuts (optional)

You can also place a banana cut in half on top for decoration.

Bake for approximately 50 minutes. Check whether it is done by inserting a knife into the centre of the cake — it should come out clean.
