Vegan cauliflower cake to treat yourself!

200 g cauliflower
1 tablespoon cashew nut butter
50 g apple sauce
50 g soft, pitted dates
100 g rice flour
Vanilla powder
1 pinch of bicarbonate of soda
Chocolate chips

Recipe

Preheat the oven to 180°C.
Cook the cauliflower in boiling water or steam until tender.
Blend together the cooked cauliflower, cashew nut butter, apple sauce and dates.
Pour into a mixing bowl and add the flour, bicarbonate of soda and vanilla, then mix everything together well.
Add the chocolate chips, then pour into the tin lined with baking paper.
Bake for approximately 30 minutes at 180°C, until the surface is golden and slightly cracked.
