– 1 potato

– 1 onion

– 200 ml coconut milk

– 1 tablespoon olive oil

– 400 ml water

– 1 teaspoon curry powder

– 1 pinch of salt

– 1 pinch of pepper

Recipe

Step 1: Wash and dice the vegetables. Finely chop the onion.

Step 2: In a saucepan, heat the olive oil and fry the onion for a few minutes, then add the squash and potato pieces, followed by the water.

Step 3: Leave covered over a medium heat for around 30 minutes for optimal cooking, then add the coconut milk and blend.

Step 4: Add salt, pepper, and curry, then mix your dish. You can also add a little ginger, nutmeg, or cinnamon if you like.

Butternut squash is a nutritious energy source containing essential vitamins, minerals and antioxidants. It adds flavour to meals while being low in calories and high in fibre. It is particularly rich in vitamin C and contains magnesium, making it ideal for boosting energy levels and supporting immunity.
