A minestrone recipe with spring vegetables — perfect for a dinner idea to prepare for the week ahead!

Ingredients

2 courgettes
400 g of asparagus
2 cloves of garlic
Juice of one lemon
1 onion
150 g of peas
70 g of spinach or other green vegetables
150 g of tinned white beans
Salt and pepper
Olive oil
1.5 litres of vegetable stock

For the pesto

40 g of basil
2 tablespoons of olive oil
1 clove of garlic
The juice of one lemon
Salt and pepper

Recipe

In a large stockpot, heat some oil over a medium heat.
Add an onion and gently fry it.
Add the garlic cloves and courgettes, then the spices.
Then add the vegetable stock (dissolve one stock cube in 1.5 litres of water).
Bring the soup to a gentle simmer, then add the beans, asparagus and peas.
Lower the heat and leave for 4–5 minutes (the asparagus should remain green and just tender)
Remove from the heat and add the spinach leaves and lemon juice.
For the pesto, blend and then stir into your soup before serving.

Alternative: chicken broth

Instead of vegetable stock, you can add our post-partum broth liquid, organic, made from chicken bones. It is naturally rich in collagen, with a comforting flavour.
