A fresh idea for a starter or aperitif!

Ingredients

1 medium aubergine
A handful of toasted walnuts
1 to 2 tablespoons of tahini
4 tablespoons of yoghurt (coconut yoghurt, for example, if you avoid dairy)
the juice of half a lemon
1 teaspoon of cumin
1 clove of garlic, well crushed
1 pinch of paprika/chilli (to taste)

Recipe

Preheat your oven to 180 degrees, place the aubergine cut in half, flesh side up
Cook for around 45 minutes, then remove and leave to cool slightly (the skin should be wrinkled and the inside very tender)
Blend the nuts in a food processor, add the remaining ingredients and lastly the cooled aubergine flesh
Blend until you achieve a smooth, creamy consistency
Serve with crudités and pitta bread (recipe here)

parsley
