Cow's milk protein (CMP) allergy is very common. Even a small amount can trigger an allergic reaction, so an elimination diet is necessary. Even without an allergy, CMPs can be poorly digested by many of us. It can be useful to know about alternatives, such as this delicious plant-based mozzarella.
Ingredients
200mL of plant-based milk
200mL of plant-based cream
30g of cornstarch
2 tbsp of lemon juice
1 tsp of salt
30mL of olive oil
2 tbsp of agar-agar

Vegan and gluten-free Nordic bread mix
Enriched with magnesium and a source of protein
2 slices of bread cover nearly 50% of the daily magnesium intake
Place the saucepan over the heat and bring to the boil, whisking continuously
Once boiling, reduce to a medium heat and whisk for a further 3–4 minutes
Pour the contents into a bowl lined with cling film
Fold the cling film over the sides and seal with a tie
Leave to cool at room temperature for a few minutes, then place in the fridge for at least 1 hour
Turn out and enjoy!
