4 slices of gluten-free country bread
2 avocados
Basil
Olive oil
1 generous ball of plant-based mozzarella (find our recipe via this link)

Rub a little oil on the bread slices (on one side only).
Top with slices of avocado, basil leaves and slices of mozzarella.
Toast and serve with a salad.
You can also add a few tomatoes or peppers (steamed first, then roasted in the oven with olive oil) for colour and vitamins!
